To dress this refined dessert, prawn crackers are used. Before you can start using the topping, the prawn crackers must first be fried. For the best results, we recommend frying it at 180°C in sunflower or groundnut oil. The prawn crackers should only be pushed under in the vegetable oil for a few seconds. For this purpose it is best to use a skimmer or a frying basket. Finally, let it cool down and you can start dressing! We provide 3 pieces per sphere as finishing touch.

We recommend that you place the pastry on the plate when it is frozen. This way it is easier to position and dress the dessert. When this is done, you can start finishing this refined dessert. You complete the dessert by adding the chocolate decoration, mint or atsina cress leaves, raspberry coulis and pistachio sponge cake. You can also choose to add fresh seasonal fruit (e.g. red fruit). This will emphasize the freshness of the dessert.
